I’m also a writer, hiker, podcast lover, wife, and mother to a 2 year old, spunky red-headed boy. My husband and I live in a small town in Oregon with our son & chocolate lab, Paisley.
I was 24 years old, stuck in a job I hated, miserable, exhausted, and 65lbs overweight. Definitely not how a 20-something should feel, AM I RIGHT? With a familial history of Type 2 Diabetes, I felt like my genetics made the condition inevitable and these wasn’t much I could do. After multiple attempts at dieting and counting calories with no changes — I was about to give up.
I knew there had to be a better way.
After learning of a family member who had tried a ketogenic diet, I poured over countless hours of research. Seemingly overnight, I radically transformed my diet, eliminating all grains, sugar, processed foods, and conventional dairy. I decided eating real, unprocessed food coupled with a ketogenic approach would change my situation, and I haven’t looked back.
After 5 months of tinkering, hard work, tons of cooking, and food prep I was down 50lbs and feeling great. My headaches were gone and my life-long love with food had morphed into a passion for the study of nutrition. The years thereafter I was introduced to weightlifting, CrossFit, and a Paleo approach to nutrition.
In late 2013 I enrolled in the Nutritional Therapy Practitioner training program through the NTA. Alongside my formal education as a certified Nutritional Therapy Practitioner, my personal health journey is really what lead me to start The North + West Kitchen. The North + West Kitchen is built around the concept that our mental, physical, and emotional health truly starts in the kitchen. This is a community for readers to celebrate real food, holistic health, and engaging community. These days, you’ll find me teaching and equipping women to take charge of their health, their career, and their life.
